Fall goodness

After my post from Friday, I had a major craving for some crock pot goodness and something pumpkin-y.  Sooo Sunday, we went to the grocery store and came home and made a couple dishes!  I found both of these on Pinterest....I seriously lurve Pinterest!

Crock Pot Santa Fe Chicken
This is a weight watchers recipe 



Ingredients:
1.5 lbs chicken breast (I used 2 chicken breasts)
14.4 oz can diced tomatoes with mild green chilies (I used 2 10 oz cans of Rotel)
15 oz can black beans (drained)
8 oz frozen corn
1/4 cup chopped fresh cilantro
14 oz can fat free chicken broth
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp cayenne pepper (to taste, I omitted b/c we didn't have any on hand)
Salt to taste

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours (we cooked on high for 2ish hours and on low for 6ish hours).  Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice.  (We added a little cheese and sour cream too)
 
 
Pumpkin Muffins

These were amazing and only had TWO ingredients, no lie.  This is a weight watchers recipe so you can feel less guilty indulging in these!



Ingredients:
1 Box yellow cake mix
1 15 ounce can pure pumpkin puree (not the pie filling)

Mix, pour into muffin tin, and bake at 350 for 20-25 minutes or so.  Sprinkle with powdered sugar or top with cream cheese frosting. So good and easy!



    



This made 12 large muffins and 12 mini muffins for me!
