Five on Friday!

 

ONE
I am extra excited about Valentine's day this year. I've already picked up Hadley's valentines for her classmates (Doc McStuffin's of course!) and pinned tons of cute treats I want to make and share with my work people. Valentine's day is on a Friday this year and I want to do a fun breakfast-for-dinner that evening for my Valentines, complete with heart-shaped red velvet pancakes and eggs!







TWO
It's been freezing here this week and I'm super busy at work with year-end reporting, which means this mama has been wearing out the crockpot. Please do yourself a favor and make this crockpot balsamic pork tenderloin!  It is sooo easy and delish! I served this with a broccoli and cheese quinoa casserole this week.



Ingredients
  • 2-3 pound boneless pork tenderloin
  • 1 cup low sodium chicken broth
  • ½ cup good balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce (I use tamari for gluten free)
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 2 cloves garlic, chopped
 
Instructions
  1. Place pork tenderloin into  crockpot. Mix together all remaining ingredients. Pour over pork and set the timer (4 hours on high or 6-8 hours on low).
  2. Once pork tenderloin has cooked, remove from crockpot. Break apart lightly with two forks and then ladle about ¼ – ½ cup of sauce over pork tenderloin.
  3. Store remaining sauce in an airtight container in the refrigerator.


THREE
Seems like Ms. Hadley has figured out how to get out of bed all by herself. She literally scared the sh*t out of me one morning this week when I was getting ready for work as she popped into my room yelling. It's definitely time for a toddler alarm clock - if the sleeping bunny's picture is lit, that means stay in bed and snooze awhile longer. Once the "awake" bunny illuminates, it's okay to rise. I think she will love this!
 
FOUR
Have y'all tried Panera's newest soup, their turkey chili? I had it for lunch one day this week and I really liked it!  It's really different as it's made with pulled turkey, rather that ground meat that is usually found in a traditional restaurant chili. Plus it has garbanzo beans which I love! I'm totally putting garbanzo beans in my chili next time. This soup certainly hit the spot during the cold snap this week!



FIVE
I am starting to make a list of odds and ends I want to get for baby Skeen #2. We have mostly everything we need, but there are a few things everyone talks/blogs about that I want this go around!

Christmas Shopping!

I officially started marking things off our Christmas shopping list this weekend!  Online shopping is too easy....I can't imagine trying to Christmas shop without the internet.  How did our parents do it?!

We ordered Hadley a play kitchen!  I've been "pinning" lots of adorable DIY kitchens on Pinterest, but let's face it, Brandon and I are not the craftiest pair in the world.  The Kidkraft brand kitchens get high marks from reviewers and are 1/2 the price of the Pottery Barn Kids kitchens that are very similar.  We got this one from Walmart.com for $99 + free shipping!  Now on the hunt for utensils and play food!


I also sat down and make our annual Shutterfly calendar for all the grandparents.  We had so many great pictures to choose from - I can't wait for them to all see the final product!  I have an extra $10 coupon Shutterfly mailed me, so if anyone needs the code (exp 12/15/11), just leave a comment and I'll email it to you.


Love these Lima Bean monogrammed platters and cutting boards on sale today at Zulily.com!  Ordered one of the platters for someone on my Christmas list and a cutting board for myself :)  I seriously couldn't help myself.

Life Planner!

I’m so excited about my new Erin Condren Life Planner I just ordered!  I’ve been hearing so many good things about these on several blogs I read.  Not to mention, Plum District had an amazing deal on these a couple weeks ago so I ended up getting my $50 planner for like $20!  I cannot wait to start using this, seriously, I can't!  With work, baby, family, friends, trying to workout, appointments, etc, this is going to come in handy.

 I've been wanting a sweet little necklace with Hadley's name. Found this cute necklace at The Vintage Pearl's site.  I can't wait till my UPS man delivers this beauty!



Finally ordered a couple Praise Baby CDs. These get great reviews and Hadley loves some of the worship CDs my sister gave her!  They make our ride to daycare very enjoyable :)



Mud Pie Sip & Munch Cup.  I found this for $5 today on the Totsy website!


I also ordered our Christmas cards today - I've never ordered them this far in advance, but Tiny Prints has 30% off certain cards through August 22nd. Yay for marking something off my to-do list!

Knoxville Mamas!

I went to Jack and Jules Consignment Sale last week and forgot to mention something awesome!! I signed up Hadley for Imagination Library. It's a program for all Knox County children (and lots of other counties in TN, too!) where they mail the child one free book each month until they reach the age of 5! This program recognizes that books help prepare children for kindergarten, build their vocabulary, and encourage family time. This is a totally free program, all you have to do is sign your sweet little baby up! Thank you Dolly Parton for starting this awesome program! Go to www.knoxlib.org to sign up!
